 Gorgonzola Sauce 2 tablespoons unsalted butter 1 teaspoon fresh black pepper 2 teaspoons chopped garlic 1/4 cup white wine 1/2 Pint whipping cream 2 tablespoons green onions 1/2 cup crumbled Gorgonzola cheese

1.Season the ribeyes with rosemary, salt, pepper, and crushed red pepper. Let sit in fridge for one hour before cooking. Preheat grill. Take the steaks out of the refrigerator and let the meat rest on the counter for ten minutes. 2.Make sure the grill is at a good temperature and put the steaks on the grill. Cook 5 minutes, rotate 90 degrees and then cook five more minutes then flip. Do the same on the other side. Depending on the temperature of the grill, and the temperature you are trying to achieve on the steaks, cook according.
Gorgonzola Sauce
1.Melt the butter and garlic in a medium saucepan. 2.Cook for a minute until the garlic starts to brown then add the white wine. 3.Cook for a minute then add the cream and reduce the liquid to about half- cooking on medium. 4.Add the green onions 4.The cream will begin to thicken and then add the Gorgonzola cheese and turn the heat to medium high. Bring to a boil stirring frequently then reduce heat to low and the sauce will thicken until it reaches the right consistency then it is ready to serve.
