The Best Tempeh Reubens

This recipe is great for the vegetarian and meat lovers alike. If you have a panini or sandwich press, the task is that much easier. If not, there are other options you can use. My boyfriend loves these with relish AND sauerkraut. Slice tempeh thin and saute with a little soy sauce over medium heat, 5-6 minutes. This gives the tempeh a true corned beef flavor. Butter one side of rye. On un-buttered side, add tempeh slice, cheese and sauerkraut(and relish, if you like). Cover one side of another bread slice with a thin layer of dressing, and butter the other side. Place dressing side down on top of sauerkraut. Set to grill on sandwich press. OR, you can heat up a skillet on medium-high heat. Place the sandwich inside, and place a medium-size, heat-resistant plate on top of the sandwich with two soup cans on top of the plate to. Grill 3-4 minutes or until cheese is melted; flip, and grill an additional 1 minute.
