Italian Minestrone Soup
Comments (0) View / Add Ingredients: 1 Whole chicken 1 Onion quartered 1 carrot, roughly chopped a few black peppercorns Small handful mixed fresh herbs (Parsley & Thyme) 1 Chicken stock bouillon cube 6 1/4C Water 1 can diced tomatoes Tubetti, or other soup pasta	Rated: Votes: (56) (62)
Break carcass into pieces and place in large pan. Add onion, carrot, celery, peppercorns and herbs. Crumble in stock cube and add a good sized pinch of salt. Cover chicken generously with cold water, and bring to a boil over high heat. Once boiling, lower heat, cover the pan half way, and simmer gently for an hour. Remove pan and cool, then strain liquid through a colander into large pot. Remove meat from carcass. Discard flavoring ingredients. Bring to a boil, add pasta and entire can of diced tomatoes. boil until pasta is tender. Add chicken and serve HOT!
